Why We're Obsessed
okay so these waffles have become a full on staple in our house and I'm not even exaggerating when I say we make them like 4 times a week hahah. they're packed with protein, they taste amazing, and the girls literally cheer when they see me pull out the waffle iron. that's a win in my book :,)
The Recipe
this is SO simple and takes like 5 minutes to throw together. here's what you need:
- 1 cup Kodiak Cakes mix (I'll add 1/4 cup extra if the batter is runny)
- 1.5 cups cottage cheese
- 4 eggs
- 2 tablespoons sugar
- splash of vanilla
- 1/2 tablespoon baking powder
How to Make Them
blend everything until smooth — like actually smooth, don't leave chunks of cottage cheese bc that's not the vibe hahah. spray your waffle iron with oil so they get nice and crispy on the outside. that crispy outside with the fluffy inside is *chef's kiss*.
Why They're Actually Good for You
the cottage cheese adds a ton of protein without changing the taste at all. like you literally cannot tell it's in there. each waffle has around 15-20g of protein which is insane for a breakfast that tastes this good. I always feel so much better starting my day with protein vs just carbs — I don't crash at 10am anymore hahah.
Tips From Making These a Million Times
make sure your waffle iron is HOT before you pour the batter. like actually hot. and don't skip the oil spray — that's what gives you the crispy edges that make these next level. we usually top ours with fresh berries and a little maple syrup. the girls like whipped cream on theirs bc obviously hahah.
