The Reality of Feeding a Family
okay I'm just gonna be honest — some nights dinner is a full on production and other nights it's whatever I can throw together in 20 minutes while Cherry is on my hip and the girls are asking me 47 questions hahah. no shame in either one bc fed is best right?? but I've found some meals that are quick AND actually good and I wanted to share them with you guys :,)
Sheet Pan Chicken Fajitas
this is probably our #1 most made dinner. throw chicken, peppers, and onions on a sheet pan with some seasoning, bake at 400 for 20 minutes, done. the girls love building their own little tacos and Tanner always goes back for seconds. I love it bc it's literally one pan to clean up.
One Pot Pasta
I throw pasta, chicken broth, garlic, whatever veggies I have, and some cream cheese into one pot and let it cook together. it makes its own sauce and it's SO creamy and good. the whole thing takes maybe 25 minutes and the girls think it's mac and cheese so they eat it all hahah.
Salmon Bowls
I know salmon sounds fancy but hear me out — I buy the pre-seasoned fillets from Costco, bake them for 15 minutes, and serve over rice with avocado and whatever veggies we have. Tanner and I are obsessed with these. the girls get theirs with extra rice and edamame :,)
Breakfast for Dinner
when all else fails... our cottage cheese waffles make an appearance at dinner time too hahah. no rules over here. sometimes I'll do scrambled eggs, turkey sausage, and fruit. the girls literally celebrate when I say we're having breakfast for dinner. it's the little things :,)
the biggest thing I've learned is that it doesn't have to be perfect or pinterest-worthy. it just has to work for YOUR family. and if that means cereal night once a week then honestly good for you bc same hahah ❤️
